            Delafield Brewhaus, executive chef Kurt Linke likes to experiment 
            with real ale in cooking.  "We 
            do a lot of cooking with beer for our banquets and  special 
            parties," says Linke. Linke 
            has experimented with beer in marinades, glazes, sauces, and especially 
            with chilis and stews. "I 
            especially like the flavors of hot chilies and aromatic spices in 
            curries to pair with beer," says Linke. He joined 
            Delafield Brewhaus in 2001 and immediately expanded their banquet 
            and wedding reception business. "We 
            have a lot of corporate offices in Waukesha and people like having 
            parties in the brewpub," Linke says, "It's a more casual 
            atmosphere than nearby hotels and banquet halls, and we can offer 
            a greater variety of dishes." Home cooks may try Linke's version 
            of a Wisconsin Fish Boil with Real Ale.  Delafield
