celebrating Tom Douglas' Redhook BBQ Sauces
Executive
chef Tom Douglas of the Palace Kitchen, and chef Sean Hartley, both
relish the challenge of cooking with hoppy beers. In fact, the Seattle
chef even bottled a BBQ sauce with beer.
Tom
Douglas' Redhook ESB Barbecue Sauce with Smoked Chilies and Honey
is one of three varieties of bottled sauce launched this year.
"A
bitter ESB can withstand the heat of smoked chipotle chiles and the
acidity of the tomatoes," Hartley says and so the ESB chipotle honey
BBQ sauce is one of his personal favorites.
Accents
of cumin, cilantro and smoked chilies are combined with fragrant fireweed
honey, balanced by the rich, round flavors of Redhook's ESB, for a
classic tomato-based barbecue sauce.
The
Palace Kitchen features lots of bar food, grilled meats and fish,
in a lush setting filled with Pacific Northwest art and sculpture.
In July,
Tom Douglas and Pam Hinckley, marketing VP for Redhook Brewery, put
on a festive BBQ and beer party, to celebrate the sauces startup.
Chicken,
ribs, coleslaw, cornbread - and plenty of Redhook ales on tap.
Yummy.
