ABC Another Beercan Chicken
Adapted from Texas brewer Sam Healy
prep time : One to two hours
recipe type: entrees
ingredients: 1 whole roaster chicken - approx. 4 lbs.
1 can lager beer (Lone Star shown in photo)
Kosher salt
Hot pepper spice blend (I used Tony Cachere's)
1 small onion, peeled and quartered

Prepare BBQ with lump hardwood charcoal to very hot coals. Place grill as low as possible to permit upright positioning of chicken. Wash chicken and remove giblets. Pat chicken dry with paper towel. Rub with kosher salt and pepper blend to taste. Open beer can and pour out 4 oz. Hold chicken upright, and push can into the cavity, wiggling the chicken down on the can as far as it will go. Tuck onion quarters around the edges of the can inside cavity to help it remain upright in the grill. Place the chicken, still upright, can end down, on a foil or metal drip pan and place on grill. Cover and cook for one and a half hours. Remove chicken and can with caution (hot beer), and slide off can with tongs. Discard can and slice chicken - about 4 servings.
