Matt's Cowboy Drunk Beans
adapted from a recipe by Matt Martinez
prep time : Advance prep required
recipe type: side dishes and grains
ingredients: 1 quart pinto beans, washed and picked over
4 quarts water
2 cups sweet white onion, peeled and coarsely chopped
1 cup bell pepper, seeded and chopped
1 cup celery, chopped
2 cups tomato, seeded and chopped
1 cup cilantro, stemmed and chopped
2 zucchini, sliced
12 oz. (1 bottle) favorite beer (Matt uses a Shiner Bock)
2 tsp. salt
1 tsp. black pepper
1 tablespoon minced garlic

Place rinsed beans in stockpot with 4 quarts fresh water and bring to a boil. Skim off foam, and reduce heat to a simmer. Let simmer until tender, about 3-4 hours. Stir in all the remaining ingredients and cook 30 minutes. Serve as a side dish with sliced brisket. Serves 12.
