Confetti Chowder with Weissbier and Seafood

ingredients:
1 tablespoon olive oil 1 cup diced red bell pepper 1 lb. fresh salmon steak, skinned and boned 1 cup fish stock 1 cup weiss bier 1 16-oz. can corn, drained 2 tablespoons minced parsley 1/2 teaspoon white pepper 1 teaspoon minced chives 1 cup half and half 1 teaspoon hot Hungarian paprika salt to taste

Place olive oil in the bottom of a large gallon soup pot and set over medium heat. Add the red bell pepper and saute until tender. Place the salmon steaks on top of the peppers in the pot, and cover. Steam for 4 minutes. Pour in stock, beer, corn, parsley, pepper, chives and stir well, breaking the fish filets into bite-size chunks. Reduce heat to low, stir in half-and-half and paprika and salt to taste. Warm through, and serve hot. Yields 4-6 servings.
