prep time : Less than 30 minutes
recipe type: sauces and gravies
ingredients: 2 bunches parsley, stems discarded, washed well (about 3 cups)
2 tablespoons minced garlic
2 cups white onion, peeled and chopped
1/2 cup extra-virgin olive oil
8 oz. chili beer or weizen
1/2 cup lemon juice
1 Scotch bonnet pepper
Salt and cracked black pepper to taste

Blend all ingredients in a food processor until thick and smooth. Use to coat a flank steak and let marinate 4 hours minimum. May also be used as a table sauce for grilled fish and pork.
