Citrus Lager Marinade

ingredients:
Juice of two lemons and two limes
1 tsp cracked black pepper
1 1/2 cups lager
2 cloves garlic, peeled and minced
1 stalk lemon grass
pinch salt

Slice lemongrass length wise and remove centre stalk and discard outer, fibrous husk. Coarsely chop stalk and place in food processor with ingredients. Blend well. When settled, marinate fish up to two hours but no longer; otherwise, the citric acids will cure the fish.
