Coriander Ale Brine

prep time : Less than 30 minutes
recipe type: BBQ, mops and marinades
ingredients: 2 tablespoons vegetable oil
2 tablespoons minced garlic
3 tablespoons cracked coriander seed
Fresh black pepper to taste
2 tablespoons kosher (or pickling) salt
2 tablespoon dark brown sugar
12-16 oz. pale ale (try a hoppy one)
3 tablespoons frozen apple juice concentrate
6 oz. pineapple juice
Optional: hot pepper sauce - a few dashes

Mix all ingredients in a large zip-seal bag, seal and shake until salt melts; then add cut up pork shoulder. Brine for 2-3 hours. Grill meat chunks with vegetables such as vidalia onion and bell pepper and serve with warmed tortillas. Do not reuse brine as a basting sauce.
