Harpoon Raspberry UFO Beer Pancakes

2 cups buttermilk pancake mix
2 tablespoons brown sugar
1 teaspoon ground cinnamon
Pinch ground nutmeg
6 ounces hefeweizen, at room temperature (such as Harpoon's Raspberry UFO)
3 large eggs
1 teaspoon vanilla extract
2 tablespoons melted butter
Butter and raspberry jam
Maple syrup

Whisk together all the dry ingredients in a large mixing bowl. Whisk together hefeweizen, eggs, vanilla extract and melted butter in a large measuring cup, and pour blend into pancake mixture. Whisk together until just blended and set aside. Preheat griddle and spritz with nonstick cooking spray. Drop batter, by 1/3 cupfuls, onto griddle. Cook until bubbles appear on surface of pancakes and edges are lightly browned, then turn over each cake with a spatula. Cook until browned, and spread each hot cake with butter and raspberry jam. Serve with maple syrup.
